24 large mushrooms (about 1 pound)
1/2 pound ground turkey
1 clove garlic, minced
1/4 cup dry bead crumbs
1/4 cup thinly sliced green onions
3 Tab reduced-sodium soy sauce, divided
1 egg white, lightly beaten
1 tea mminced fresh ginger
1/8 tea red pepper flakes (optional)
1. Remove stems from mushroms; finey chop enough stems to equal 1 cup. Cook turkey, chopped stems and garlic in medium skillet over medium high heat until turkey is no longer pink, stirring to break up meat. Drain and discard fat. Stir i bread crumbs, reen onions, 2 tablespoons soy suce, egg white, ginger and pepperplakes, if esired; mix well.
2. Preheat broiler. Line broiler pan with foil; insert broiler rack. Coat broiler rack with nonstickcooking spray.
3. Brush mushroom caps lightly wit remaining 1 table spoon soy sauce; spoon 2 teaspoons stuffing into each mushroo cap*. Place stuffed mushroom on prepared broiler rack. Broil 4 to 5 inches from heat 5 to 6 minutes or until heated through.
*Mushrom can be made aheat to this point; cover and refrigerate up to 24 hours. Add 1 to minutes to broiling time for chilled mushroooms,. Or, freeze filling in inividual portions. to freeze, place portions on cokie shet or shallow pan; place in freeezer 30 minutes to fir slightly. Transfer to freezer food storage bag and freeze coetely. Thaw in refrigerato before filling mushrroms as directed.

My notes: It dosn't take much ground turkey. The lefover meat mix got scrambled into eggs. They were good to. I don't think the egg did anything, with these instructions the egg cooked and didn't make anykind of binder. I used extra soy sauce to sprinkl on top of each mushroom before broiling.
These were really good, and I wanted MORE...but they were all gone :(
